Salmon Roly-Poly Breakfast
Breakfast doesn’t have to be slow and elaborate to compete with round and colourful cheerios 🙂 We have tried a “green” 1 egg omelette with 2 slices of “coral” smoked salmon rolled in and a plain “yellow” omelette with salmon with some red peppers to decorate. IT DOESN’T TASTE LIKE CHEERIOS! it tastes much better. Kids like salt and fat, their little bodies are clever.
Here is what you do … approximately:
Make an omelette:
1 egg beaten
pour into hot pan with clarified butter or other healthy fat of choice
let it cool just a little bit so the salmon doesn’t cook,
lay the salmon slices, roll, serve
for drama and finesse ( because they deserve it!) add a couple of chives sprigs criss cross or aligned for a modernist twist
